Chaource is one of those French cheeses where simplicity is just right. This AOP cheese is made with full-fat cow’s milk and has a soft texture with a white bloomy rind. It can easily take centre stage on a small cheese board without needing a table full of extras.

Serve Chaource with good bread and keep fruit or compote separate. That way, you can taste the cheese’s own character first and then build your favourite bite. Chaource is also a calm yet celebratory choice as a cheese course after a meal.
